Tom Kha Gai (Chicken Coconut Soup)

I made a big pot of Tom Kha Gai the other night.  May last all week!  This is simply one of Thailand's signature dishes.  Click here for a recipe.

Cantaloupe

Although my home country (Thailand) is renown for its wide variety of fruits, my adopted country (United States) has several standouts.  Cherries, strawberries, watermelon, peaches and grapes are some favorites of ours.  Another one we really love is cantaloupe.  I cut them like this every time.

Gai Wan (Sweet Chicken)

This dish is typically made with pork.  I made it with chicken instead.  Delicious.  And I made some boiled rice.  Click here for a good recipe.

Thai Lemon Tea

I made this refreshing Thai Lime Tea (Cha Ma-Nao) a few weeks ago.  I used some tea I brought back from Thailand on my last trip.  However, you can find good brands at your local Asian grocery store.  If you visit Thailand, especially when it's hot, I would recommend Cha Ma-Nao.  You can get it on the street and in most restaurants.

Triple-Layer Lemon Cake

I baked this cake for my own birthday!  We ate some of it, and I gave lots to my friends.

Easy Cheese Danish

I followed Ina Garten's Easy Cheese Danish recipe, and then altered it some.  I added some mixed berry jam, apricot jam and some flaked almonds.  Turned out nice.

Khai Pa Lo (Cinnamon Eggs)

This is a favorite dish in Thailand, and you can find it anywhere.  Great served over rice.  After trying it a few times, I think I have finally got it down pat.  Although I have cooked it with chicken in the past, this time I used pork shoulder and pork belly.   Click here for a recipe.

Another Caramel Cake

Actually did this one on Thanksgiving, using the same Southern Living recipe.
